Ayam taliwang is a traditional Indonesian dish from Lombok, a province in Nusa Tenggara Barat. It is made with chicken that is marinated in a blend of spices and then grilled over charcoal. The chicken is typically served with rice, sambal, and a side of vegetables.

Here is a recipe for ayam taliwang:

Ingredients:

  • 1 (5-pound) whole chicken, cut into 10 pieces
  • 1/2 cup lemongrass, bruised
  • 1/2 cup galangal, bruised
  • 10 kaffir lime leaves, bruised
  • 10 red chili peppers, chopped
  • 10 shallots, chopped
  • 10 garlic cloves, chopped
  • 1 tablespoon ground turmeric
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup coconut oil, for grilling

Instructions:

  1. In a large bowl, combine the chicken, lemongrass, galangal, kaffir lime leaves, chili peppers, shallots, garlic, turmeric, coriander, cumin, salt, and black pepper. Mix well to coat the chicken.
  2. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, or overnight.
  3. Preheat a grill to medium-high heat.
  4. Remove the chicken from the marinade and brush with coconut oil.
  5. Grill the chicken for 15-20 minutes per side, or until cooked through.
  6. Serve the chicken with rice, sambal, and a side of vegetables.
