Ingredients:
- 1 (5-pound) whole chicken, cut into 10 pieces

- 1/2 cup galangal, bruised
- 10 kaffir lime leaves, bruised
- 10 red chili peppers, chopped
- 10 shallots, chopped
- 10 garlic cloves, chopped
- 1 tablespoon ground turmeric
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon salt
- 1/2 teaspoon black pepper
- 1/2 cup coconut oil, for grilling
Instructions:
- In a large bowl, combine the chicken, lemongrass, galangal, kaffir lime leaves, chili peppers, shallots, garlic, turmeric, coriander, cumin, salt, and black pepper. Mix well to coat the chicken.
- Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, or overnight.
- Preheat a grill to medium-high heat.
- Remove the chicken from the marinade and brush with coconut oil.
- Grill the chicken for 15-20 minutes per side, or until cooked through.
- Serve the chicken with rice, sambal, and a side of vegetables.
